Filled with iron-rich beef and colourful veggies these quesadillas are the perfect finger food for babies for toddlers. For slightly older children task them with filling and folding their own with lots of colourful veggies and tasty toppings. Check out the recipe leading children’s cookery author and food expert Annabel Karmel.Prep: 10 minutesCook: 15 minutes Makes: 2 quesadillas--WHAT YOU'LL NEED--1 tbsp sunflower oil4 spring onions, sliced75g courgette finely diced½ red pepper, finely diced110g lean minced beef1 clove garlic, crushed3 tbsp sweetcorn, drained1 ½ tsp korma curry paste1 tsp sundried tomato paste40g Cheddar cheese, grated4 small tortilla wraps--STEP 1--Heat the oil in a frying pan. Add the spring onion, courgette and pepper. Fry for 2 minutes.--STEP 2--Add the beef and fry with the vegetables until browned. Add the garlic, sweetcorn, curry paste and sundried tomato paste. Stir and simmer for 4 minutes.--STEP 3--Put one tortilla wrap on a board. Spoon half of the mixture on top and spread out to the edges. Sprinkle with half of the cheese. Top with another wrap. Repeat.--STEP 4--Heat a large frying pan until hot. Add the quesadilla and fry for a few minutes on both sides until golden crisp and the cheese has melted inside.--STEP 5--Remove from the heat and slice each quesadilla into 6 wedges.
